Tonkatsu Sauce
Tonkatsu Sauce. Thé sauce for tonkatsu (the breaded pork chop) par excellence, of course. But much more than that . Because of its rich mix of flavors you can perfectly combine this sauce with a lot of other things!
The original tonkatsu sauce is made with, among other things. tomatoes, apples, plums and so on. Unfortunately, this is a lot of work. On the other hand, you will find a number of recipes on the internet that are very succinct; they stick to ketchup with worcestershire sauce, as it were. I thought that was a bit too simplified.
In my search for a golden mean , I came up with this solution. It's relatively simple , without a huge laundry list of ingredients, and most importantly, it tastes great !
Give this sauce a try, you won't regret it.

  • ketchup -
    125 gr.
  • onions -
    1 piece
  • ginger -
    2 cm
  • garlic -
    2 cloves
  • sake -
    75 ml
  • mirin -
    25 ml
  • worcestershiresauce -
    2 tablespoons
  • soy sauce -
    1 tablespoon
  • oyster sauce -
    1 tablespoon
  • mustard -
    1 tablespoon
  • sugar -
    1 tablespoon

Hint


If you don't want to use sake or mirin, you can replace the first with water with some lemon juice in it, and the second with (rice) vinegar.

The Method


  • Peel and roughly chop the onion and garlic. Peel and grate or cut the ginger into small pieces.
  • Mix the ketchup with the sake, the mirin, the vegetables and all other ingredients in a cooking pot. Mix thoroughly and let it simmer under a lid for 15 minutes on a low heat.

  • Strain the vegetables from the sauce and serve warm or cold.

Hint
