Place the yogurt in the bowl of the food processor first. You want a volume roughly the same as the other ingredients (except the olive oil and lime juice) combined.
Peel and pit the avocado, cut into chunks. Coarsely chop the parsley, mint leaf and basil and add. Season with salt and pepper.
Save one lime for the zest and squeeze the rest into the bowl. Add a few spoons of olive oil. The final dosing is done later.
Blend for a minute with the food processor. Check the viscosity of your dressing and add olive oil until you have the desired consistency.
Taste and adjust the seasoning and sourness with additional pepper, salt or lime if desired. Scrape the last lime and drizzle your dressing with the zest!
