The Method
Peel the onion and the carrots
Finely chop the onion, the celery and a little less than half of the carrots. Crush the garlic
Deseed and cut the peppers in chunks
Heat the olive oil on a large pot on the stove and sauté the finely chopped ingredients
After a few minutes, add the galric, the provencal herbs, the pepper and the salt and combine well.
Add the stock cubes and put the oxtail on top. Cover with the red wine.
Let it simmer under a lid for two and a half hour on very low heat
Add the peppers and mix them in, put the remainder of the peeled carrots on top. Let it simmer for another half hour under the lid.
Serve with (mashed) potatoes or rice. Bon appétit!
