In Flanders people often make frangipane tart , and the English have a version that is definitely worth trying: the Bakewell Tart - the name comes from the village, not the baking method! A Bakewell tart is an English confection consisting of a base of shortcrust pastry under layers of jam, frangipane and a topping of flaked almonds ... can only be good, right?
For the jam I chose raspberries , because the sour side contrasts nicely with the sweet filling, and since I still had a sheet of puff pastry, I used that instead of the shortcrust pastry.. and that works just as well!

The Method
Roll out your dough and cover a pie pan with it. Remove the excess dough and fill with baking paper and baking beans (or like me, with dried white beans). Bake blind at 180 degrees for 15 minutes. Let cool for ten minutes before processing further.
Add the sugar to the soft butter (room temperature) and beat until you have a white mass. Then add the eggs one by one while beating. Beat for a minute and add the almond powder.
Add the flour to the mixture as weel as the milk (this mainly ensures that you get the mixture neatly in your pie pan later, forgetting makes this very difficult - I speak from experience!). whisk for two minutes and add the almond extract. Beat for one more minute and your filling is ready.
Spread the jam over the bottom of your dough. Pour the filling over and spread evenly. Make sure there are no holes.
Scatter the almond flakes on top. Bake at 180 degrees for 35 minutes.
