This dish is super easy to make and only requires a few ingredients. Plus, it’s great for making ahead: it keeps well and is easy to portion. Handy for busy days when you want to quickly heat up a nutritious meal!
The Method
First cube the chicken. I used breast, but any boneless piece of chicken will do.
Sprinkle with the cumin and the smoked paprika, and add salt and a splash of olive oil. Mix well and cover with cling film. Let it marinate for an hour in the fridge.
Finely chop the shallots and crush the garlic.
Slice the okra in 1cm pieces.
Cook the spinach in a big pot of boiling water for 3 minutes. Scoop them out and put in icewater to preserve the vibrant green color.
Squeeze the excess water out of the spinach and put in the bowl of a blender. Add all but what you need for serving of the parmesan. Blend until you have a smooth green sauce.
Heat the oil in a sauté pan (or a wide pot) and color the chicken. Next add the shallots and the okra. Stir for five minutes before adding the garlic. Cover and let it simmer for 15 minutes.
Add the green sauce and let simmer while you cook the penne (according to the instructions on the package).
Drain the penne (and keep a few spoons of the cooking water) and add them to your spinach, okra and chicken. Mix and let is simmer five more minutes so that the penne soak up that sauce.
Plate and sprinkle a bit of parmesan on top.
